Vegetable Quesadillas

 

Ingredients (makes 4)

 

8 Tortillas

2 Large Tomatoes

1 Yellow Pepper

1 Red Onion

1-2 Large Green Chillis

200g Grated Cheddar Cheese

Cayenne Pepper

Olive Oil

 

Best party food ever; I love quesadillas and I make them whenever I'm having a shindig. They're dead easy and if you leave a bowl of the vegetable mix and a bowl of grated cheese in the fridge you can just go and knock up a fresh one in minutes to stick on your garden table when you've got people round.

  1. Finely dice your chillis and chop the rest of your vegetables into small chunks. Mix them all together in a bowl with a few pinches of cayenne pepper.

 

  1. Warm some olive oil in a frying pan and drop your first tortilla on top. You don't want it too hot or the bottom of the tortilla will burn before your cheese melts.

 

  1. Sprinkle some grated cheese on the tortilla, then cover with a handful of the veg, then another layer of cheese. Do not overfill them or they won't hold together. Put another tortilla on top, the two layers of cheese should glue it together.

 

  1. Lift the edge of the bottom tortilla with the spatula to check it constantly so that it doesn't burn. When it is golden brown you need to flip your quesadilla. This is the hardest part as the insides can just all fall out. Hold the top tortilla with splayed finger tips until the last possible moment and then flick it over quickly. If some bits do fall out, just squish them back in.

 

  1. When both sides are browned and the cheese is melted and gluey, turn it out onto a plate and slice it into 8 like a pizza. Serve with 5-Layer Dip and margaritas!
