Forking Off





  • Half a cucumber
  • Juice of half a lemon
  • 1 Clove of Garlic
  • 2 Tsp Olive Oil
  • 3 Heaped Tbsp Plain Yoghurt
  • Salt and Pepper
  • Pinch Paprika
  • Fresh Mint to Garnish


Tzatziki (also known as Cacik) is a cucumber and yoghurt dip super-popular all over the middle-east. There are lots of variations, but this is mine - it's dead easy and lovely on a summer's day, especially in a falafel pita.

1. Peel and de-seed the cucumber half and cut it into sticks. Lay the sticks on some kitchen roll to absorb the juice or your dip will be too wet.


2. Dice your garlic very finely and chop your cumber into small pieces.


3. Mix all the ingredients together. Ta-da!


4. Garnish with a sprig of fresh mint and store in the fridge.
