  • Aubergines
  • 2 Garlic Cloves
  • Pinch Salt
  • Pinch Black Pepper
  • Juice of One Lemon
  • 2 Tbsp Tahini
  • 3 Tbsp Olive Oil
  • Parsley to Garnish


Baba Ganoush is a smokey-flavoured middle-eastern dish which is usually served with a heap of salad and lovely steaming warm flatbread.


To make it, prick your aubergines with a fork (or they'll explode like in my first attempt) and then grill them for 15-20 minutes until the skins are charred and blackened. When they're cool enough to handle, cut them in half and scoop out the contents, then mash them together with the other ingredients (except the parsley). Try to avoid blending as this can make the mixture too sloppy, some coarseness is good with this.


Garnish with a drizzle of olive oil and the parsley.
